Fruit Cobbler

Crisply cobbler or deep-dish pie. Quick and easy.

  • ½ cup butter
  • 1 cup flour
  • 1 cup sugar
  • 2 tsp baking powder
  • 1/8 tsp salt
  • ¾ cup milk or cream
  • 4 cups fresh or frozen berries, rhubarb, or canned or fresh peaches or apricots

Preheat oven to 375°. Place butter in an 8"x10" baking pan and melt in the oven. Sift together dry ingredients in a separate bowl. Stir the milk into the dry ingredients until smooth. spread the fruit over the melted butter in the baking pan. Pour the flour mixture over the top. Bake 40 minutes or until the top is browned and crisp.

A deep dish pie can be constructed by changing the layer order to butter, batter , and then fruit on top.
